A menu that makes you happy
Middeldorp always works with the same idea. "I want to make my guests happy. That is why I started cooking. I try to achieve this with my takeaway menu: a menu that makes you happy. For example, asparagus soup was on our menu, a true seasonal classic. In addition, because of the RIVM rules, I try to cook alone as much as possible. This also affects my menu. "
A virtual hug
All alone in the kitchen, how is that? "On the one hand, it is not so much fun. I would prefer to hug everyone. On the other hand, it is nice to be in my own restaurant a lot and to cook a nice meal for people. It is so important to people's social life, so I like to help maintain it. Last week we had some food left over from the first week, I brought it to my mother and her neighbor. By doing this I want to give people a virtual hug. "
The star is a side issue
Middeldorp is not thinking about his Michelin star. "My intention is always to make the guests happy and never what I have to do for a Michelin star. This idea now translates into a three-course menu that is accessible to people at home, but of course we put in a lot of knowledge and craft." This seems to work. "We receive a lot of positive reactions from our guests, which is very motivating. We must not forget: food connects people, now more than ever. "
